Spinach Pesto Sauce Recipe – Tallarin Verde

This spinach pesto recipe originates from Peru, where pesto is prepared using spinach instead of the basil typical for the Italian pesto sauce. The Peruvian cuisine might serve it with potatoes and steak.

Ingredients

1 cup of fresh spinach leaves
1 tablespoon of pine nuts
2 garlic cloves
2 tablespoons of parmesan
2-3 olive oil tablespoons
Salt and pepper to taste
½ tablespoon basil leaves (optional)
Salt and pepper to taste

Directions

Start first by crushing the first spinach leaves and some crushed garlic in a mortar (or blender), add some pine nuts and add more spinach leaves. Add also some basil leaves for flavor. Later, add the olive oil, the grated parmesan and continue with mixing until you get a puree.

Season with salt and pepper to taste.

Tips

This Peruvian spinach pesto recipe can be served with beef, potatoes, pasta, salad or even bread.

    This dish is made with spinach AND basil

    You can add or leave it as you like. The recipe used it, but we set basil to optional. I like it better with as it adds some additional fresh flavor :)
